Sultry Cellars Wines reflect the possibilities of more time for massaging and finessing the wine. We primp a little more and we end up with a sexy, sultry, seductive wine that is open to all. Our labels exactly match the sassy attitude of the wine. Sultry Cellars is a limited bottling run of wines. Available only through the Cellar 433 tasting room in Jerome or online.

Stiletto

Viognier, Malvasia, Verdelho

Stiletto

Wine Name: Stiletto

Appellation: Arizona

Alcohol Content: 13.74%

Blend: Viognier, Malvasia, Verdelho

Description: The fruity nose of peaches and tropical fruit and a familiar honeysuckle carry through onto the palate. With such a bold nose and medium acidity Stiletto may seem sweet for some though she is rightfully dry.  

Winemaker’s Notes:  The unique weather conditions of Dragoon Mountain Vineyard offer very comfortable growing conditions for the Rhone varietals. That being said, they must be meticulously handled and given special favor in the

vineyard lest acidity fall to the wayside and we are left with aromatic, but flabby wines.  

Pairings: Roasted duck with cinnamon and cardamom,

curried squash and pear bisque or the ash-dusted Valencay cheese.

Seductive

Marsanne/Roussane, Riesling

Wine Name: Seductive

Appellation: Arizona

Alcohol Content: 13.49%

Blend: Marsanne / Roussane, Riesling

Description: Intense aromas of honey, ripe apples and

almonds. A wonderfully round feel with flavors of honey and ripe Comice pears with an impression of orange marmalade.

Winemaker’s Notes:  The line between lush and flabby is a fine one, but relentless vineyard management and creative new world blending bring the Rhone varietals to life.

Dragoon Mountain Vineyard’s high mineral content gives Riesling a refreshing tang and cool fermentation lets the fruit flavors shine through in abundance.  Fresh now, but will age well up to 7 years.

Pairings: Spicy Thai curries, grilled root veggies and squash or the ash-rinded Saint Maure cheese.

Description: A sinuous waft of white flowers and lemon curd on the nose welcome you in to a lusty body rich with passion fruit, pears and cool, wet river stone.

Winemaker’s Notes:  The chardonnay aged beautifully in neutral oak for 18 months. The blend is brought to razor sharp perfection as Semillion and Chenin Blanc finished in stainless steel. The fresh feel of Chenin Blanc provides

balance for this fleshy blend.

Pairings:  Pan roasted ginger pork chops, Foie Gras with

Apple Chutney on Toasted Brioche, baked squash, or aged Gruyere.

Blend: 50% Chardonnay, 50% Sauvignon Blanc

Description: Dreamy, rich and full bodied with balanced acidity. A wickedly sweet nose of spring florals and vanilla  lure you in to a voluptuous mouth full of apple and soft

citrus. A lingering finish of tree fruit with a stroke of

minerality.

Winemaker’s Notes:  Aged 18 months in oak and a very

limited production using the Chardonnay that took gold in the 2014 Arizona Republic’s State Wine Competition and

Festival at The Farm. Dragoon Mountain Vineyard’s

signature Sauvignon Blanc braces the body with layers of stoney minerals and palpable acidity creating harmony within this luxurious blend.

Pairings: Broiled Tilapia with lemon butter sauce,  grilled vegetables, autumn squash soup or butterscotch creme brulee.

Blend: Muscat, Sauvignon Blanc

Description: A full nose of wet Autumn leaves and butterscotch with flavors of gentle, honeyed oak and fresh cut grass.

Winemaker’s Notes:  The Arizona grown Muscat is done in a rare dry style preserving its rich body and aromatic warm spiced nose. Because it is not heavy with alcohol the Muscat interlaces beautifully with a classic styling of Sauvignon Blanc for a transcendent, unexpected finish.

Pairings: Roasted turkey with tarragon, cold ceviche, crisp apples and  pinenuts or sorbet.

Blend: Graciano-Montepulciano blend with Alicante Bouschet, Mourvedre and Counoise

Description: Deeply colored; perfumed, with aromas of mulberry, violets and chocolate. Mildly tannic with flavors of delicious ripe plum and black pepper are complemented by vanilla and plump raising in the finish.

Winemaker’s Notes: Our award winning Montepulciano brings optimal acidity and a wealth of rich spice. The choice to blend with one of our newer stars Graciano was obvious for its intense aromas and unmistakable presence in blends. As with all of our Sultry Cellars wines, your reward comes from the patience of the winemaker and his willingness to age the wine. A gentle oak protocol supports the wine, it doesn’t mask it. 

Pairings: grilled lamb chops, lasagna with truffles or earthy cheeses such as Pecorino d’Abruzzo or Talamello.

Blend: 60% Sangiovese, 20% Cabernet Franc with Merlot, Pt Verdot, Pt Sirah, Alicante Bouschet

 

Description: Beautifully crafted in Super Tuscan style, but showing off a little New World flesh. A darker brick hue and smooth tannins move you into a palate of bright tangy berries and cocoa – even a little apricot stylishly dressed with the dark richness of her French counterparts.

 

Winemaker’s Notes: The patience shown in the decision to hold back Dragoon Mountain Vineyards Sangiovese in        mature French oak is your reward. Graciously temperate weather allowed for even ripening bringing balanced fruit and structure. The choice in complementing fruits brings complexity and depth.

 

Pairings: Tagliata with Arugula, Baked root vegetables or Pecorino Tartufo.

Blend: Marselan, Shiraz, Arinarnoa, Alicante Bouschet

 

Description: 30 months in neutral American oak softens the beautifully colored red blend rich with aromas of violets, jammy fruit and peat. Nicely balanced alcohol and acidity let us     enjoy flavorful blueberry and exotic spice.

 

Winemaker’s Notes: Marselan is a cross of Cabernet Sauvignon and Grenache. We obtained this INRA certified clone and planted it in Dragoon Mountain Vineyard’s soil because it is well adapted to drier soils and hot, sunny terroirs. It brings fine tannins, acid structure, cassis and cherry flavors, and excellent color. Dragoon Mountain Vineyard is also the only U.S. grower of Arinarnoa, a cross of the Bordeaux varietals Merlot and Pt. Verdot.

 

Pairings: Roasted shoulder of lamb with Provençal roasted vegetables, Cèpes à la Bordelaise (sautéed mushrooms), and rich French cheeses.

Wine Name: Cat’s Meow, 2nd Bottling

Appellation: Arizona

Alcohol Content: 14.19%

Blend: 70% Blaufrankisch, Petite Sirah, Syrah  and Mourvedre

Description: “…incredible blackberry jamminess to the nose, intermingled with the soft scents of roasted prickly pear and watermelon; after decanting, notes of plum also appear. Notes of clove-spiced plums, black cherry, cassis, and intermingle with the aforementioned prickly pear, and blackberry jam, making for a sort of dark fruit salad character.” ~ As reviewed by The Wine Monk: http://azwinemonk.wordpress.com

Winemaker’s Notes: Blaufrankisch deserves to age. It can be harsh when young, but a little patience brings reward. This grape is exclusive to Dragoon Mountain Vineyard in Arizona and John McLoughlin treats it as the prize that it is. Lushly textured and teeming with new found varietal distinction, a benefit of ripening in the warm AZ sun.

Pairings: BBQ tenderloin with garlic mashed potatoes or smoked tofu burger, Mushroom risotto or pungent cheeses like Stilton or deeply aged Gouda.
